Blue Bayou Dinner in Twilight

We got hungry and chanced a walk up to Blue Bayou to change our 5 pm priority seating to 3:45 pm. Got it. Asked for a riverside table. Got it, but next to kitchen. I ordered glazed pork chop with Granny Smith apples, sautéed spinach, vegetable of the day was marinated white asparagus. Blue Bayou is perpetually twilight on a bayou, and iPhone prefers brighter light levels. So here’s my dinner, what you can see is the plating of it. You get with that a roll and butter, gumbo or wedge of lettuce with tomato, bleu cheese, slice of avocado. Around $28 or so, but DL Premium Annual Pass is accepted here, so take 15% off which essentially pays your waiter tip.

Michael and Rich ordered gumbo, it was chicken gumbo. By New Orleans palate standards (we live in the metro area) the gumbo was not authentic. New Orleans cooking techniques from the great chefs there on through to people’s moms always make a roux first then you sautée your meats and vegetables in the roux then add your stock. That way the flavor of the meats and veggies are right into the thickening agent, the roux. What Blue Bayou serves is merely thick soup over rice. Not bad tasting at all. But not authentic New Orleans taste or texture or nuance. We prefer the real thing, at home.
